Washed Maragogype from Don Ezequiel
Plan Libertad
In remote plots high above the Plan Libertad community, Don Ezequiel grows exceptional Maragogype. Reaching these plots requires a strenuous two-hour hike up steep mountain path. Due to the remoteness, the coffee is pulped and washed next to the plots, minimizing the burden of transporting heavy cherries downhill.
For the past three years, Edelmira has supported improving the cherry selection.Today, only perfectly ripe cherries reaching a peak sweetness of 24° Brix or higher are harvested, and this discerning touch certainly shines through in the final cup.

Los Frijoles
Maragogype is an iconic but rare cultivar within Mexican coffee culture, and Edelmira has taken on the challenge of preserving and encouraging Maragogype production in Chiapas. The strategy is simple: pay a high price for exceptional cherries and carefully process them. Only 1% to 3% of Maragogype coffee beans are peaberries. Their characteristic large size resembles black beans, or “frijoles" in Spanish, a holy ingredient in Mexican food.
Los Frijoles is a blend of peaberries from their top-quality lots,"Plan Libertad," "Nuevo Vergel," and "Emiliano Zapata”.

Natural Maragogype from Marco Romero Santiz
Emiliano Zapata
Marco, born in the Tzeltal community of Emiliano Zapata, carries on his family's three-generation coffee legacy. He oversees processing at Edelmira while also fostering strong relationships with Tzeltal coffee farmers. Marco meticulously mapped coffee varietals across his community and was instrumental in showcasing Maragogype for separate processingand higher farmer value.
In this Natural processing, extremely ripe, 25° Brix or higher cherries weredried on raised beds for 20 days under partial shade.

Anaerobic Maragogype from Manuel Sanchez
Nuevo Vergel
Don Manuel Sanchez and his family areextremely dedicated coffee producers within the Tzeltal community of Nuevo Vergel. Partnering with Edelmira, they embarked on a special project: a limited Maragogype lot showcasing the land's unique quality.
The whole lot was harvested in a three-day spree at peak maturity. Overnight,the cherries were transported to Edelmira's Micromill and then stored anaerobically for 36 hours at 25°C. It’s rare that we find Anaerobic coffee welike as much as Nuevo Vergel.

Mexico
Chiapas
Coffee production in Mexico’s southern state of Chiapas goes back to the 18th century. Chiapas lushy and mountainous environment offers exceptional conditions for coffee agriculture, with plots altitude ranging from 1300 to 2000 masl.
Originally a dominant bourbon arabica region, local farmers turned massively to organic farming practices and introduced new crops from Central America over the last decade to improve plantations resistance to coffee rust while maintaining terroir cup profile of chocolate taste and clean acidity. In 2021, Mexico was the second biggest producer of organic coffee in the world.
